对乳酸菌中胆盐水解酶研究现状进行分析,从编码基因、蛋白氨基酸结构以及酶与肠道间密切关系等方面入手,阐述了肠道益生菌通过胆盐水解酶对胆盐的水解,可以达到耐受肠道胆盐压力,增强细菌表面对体内免疫系统的抵抗能力建立长期感染,促进在高等动物肠道内细菌的定殖,降低血清胆固醇水平等作用,为最终治愈高胆固醇血症提供了良好的解决方案。
乳酸菌(Lactobacillus)是发酵糖类且主要产物为乳酸的一类无芽孢、革兰氏染色阳性细菌的总称。凡是能从葡萄糖或乳糖的发酵过程中产生乳酸的细菌统称为乳酸菌。是一种存在于人类体内的益生菌。乳酸菌可用于制造酸奶、乳酪、德国酸菜、啤酒、葡萄酒、泡菜、腌渍食品和其他发酵食品。
